Wild rice is doing a lot of quiet work in winter.
Here are three ways it earns it’s keep.
1. Wild Rice Stir-Fry (the surprisingly good one)
Cooked wild rice, sautéed vegetables, and chicken — all brought together with chicken broth instead of oil.
It sounds questionable.
It is not.
The rice soaks up the broth, everything stays cozy instead of greasy, and suddenly it feels like something you should be eating when it’s dark at 4:30 pm.
Serve hot. Eat twice.
2. Wild Rice + Turkey Soup (but make it filling)
Classic turkey soup, but with wild rice doing the heavy lifting.
The rice thickens the broth just enough to make it feel like a real meal, not a suggestion.
Add carrots, celery, onion. Let it simmer until the kitchen smells like you made good choices.
Excellent the next day. Possibly better.
This is a recipe we fell in love and is now a staple!
3. Creamy Wild Rice Skillet (no apologies)
Wild rice cooked down with broth, a splash of cream (or not), mushrooms, and whatever protein you have nearby.
This is the one you make when:
- it’s cold
- you’re tired
- and you want dinner to feel like it’s on your side
Serve in a bowl. Eat slowly. Repeat often.
Leftovers are part of the plan.
You don’t need exact measurements.
Wild rice forgives a lot.
Just three things that work.
Save what works. Skip what doesn’t.
